Healthy Summer Salad
Hey Everyone --- Here’s one of my favorite summer salad recipes. This salad is full of fiber and healthy fats, quick ‘n easy to make, and it’s super tasty!
- Healthy 8 Chopped Veggie Mix, 16 oz. (Trader Joe’s)
- Organic Broccoli Slaw (Trader Joe’s)
- Bunch of fresh cilantro, chopped
- Walnuts, chopped ( approximately 1 cup)
- Olive Oil (approximately 3/4 – 1 cup)
- Apple Cider Vinegar or Organic BraggBerry Dressing (Whole Foods) 1/2 – 1 cup
- Spices: Celtic sea salt, Black Pepper, 21 Season Salute (TJs), Lemon Pepper
Mix all of the above ingredients together in a large bowl. For variety, sometimes I’ll add fresh pomegranate seeds. I love this salad with grilled chicken tenders.
The Healthy 8 Chopped Veggie Mix is also great for stir-fry. If you don’t have a Trader Joe’s in your area, the ingredients in the Healthy 8 include: broccoli, carrots, green and red cabbage, jicama, green bell pepper, radish and celery.
