Healthy and Easy Coconut Chicken Recipe
This coconut chicken is so easy to make and delicious too!
Ingredients: 1 lb. Organic chicken tenders; 1 cup unsweetened coconut milk; 2 Organic Eggs (beaten); 1/2 to 1 cup Unsweetened Organic Shredded coconut; Small amount Organic Coconut Oil
Marinate chicken tenders in coconut milk overnight.
Dip chicken into beaten eggs. Roll in shredded coconut. Coat pan with organic coconut oil. Bake at 350˚ for approximately 40 minutes or until chicken is done and coconut is golden brown. Serve with your favorite steamed veggie and quinoa or brown rice.
